The production process, which is not forced, lasts over three days, to permit protection of the organoleptic qualities of the product; more over, the knowing balance between the processing temperature and humidity allows us to turn out a product that remains soft and fragrant over a period of time. Only natural yeast is used, obtained from the fermentation of wheat flour and water alone, for optimum natural leavening, which does not require the addition of preservatives. With the extraordinary flora contained in the natural yeast and respect of the times required, in fact, a porous paste is obtained that turns into a soft and smooth product, which conserves the exclusive quality of the materials used for a long period of time and guarantees indisputable quality and the utmost digestibility of the product.
