Flour and Legumes
Once upon a time there was pasta with beans, a poor dish that people were lucky to have every day or even almost every day on their table. As time went by, we realized that pasta with beans is actually a very complete meal: carbohydrates, proteins and vitamins all in the right amounts.
Chickpeas, beans, lentils, and spelt—another local wheat—used to substitute meat as a source of protein, carbohydrates, fiber, vitamins and minerals, mainly because they were more economical and truly genuine.
Nowadays legumes are still cultivated in a traditional way, without any chemical fertilizers or, even worse, without any genetic mutations. They are entirely biological products that represent the tradition of dishes in Abruzzo from the past, present, and future.
