Rum agricolo, pot still, Port Morrant Distillery. All rum from the Moon Import selection comes from original barrels aged in Scotland, selected and bottled in the same place; with all dues respect to other countries Scotland really is the best place in the world for maturing alcohol. The colour comes out during the maturation in oak casks but also from the produce that was matured in the casks previously. For example, if the barrel contained Sherry previously the rum absorbs the tannin and has a darker colour than if it had contained something else. The experience and ability of the Scots in aging whisky is a determinant in the exaltation of a great rum.
